Below I’ve listed a few recipes that I’ve recently been enjoying. They’re all super simple, so I hope they are a good source of meal inspiration!
Strawberry Spinach Salad
My husband and I both adored this simple salad of spinach leaves, mandarin orange wedges, sliced strawberries, sliced almonds and this lovely raw strawberry dressing.
Grain-Free Granola
A very good granola that doesn’t require oats (amen!). Next time I will soak all the nuts and seeds for 8 hours, dehydrate them for 8 hours and then make the recipe. It’ll be far easier to digest. I also want to try this recipe in the dehydrator for a raw granola. I’m sure it will be great.
Buckwheat Quinoa Pancakes with Blueberry and Ginger
I had these pancakes this evening for dinner. Mine came out much flatter than those in the original picture. I’m going to make them again soon to see if I can’t figure out where I went wrong. They are pretty tasty. My husband probably wouldn’t eat them however because they aren’t very sweet and you can definitely taste the buckwheat flour. I don’t mind it but I know he will.
Taco Plate
At the suggestion of one of my therapists, I tried re-introducing organic corn into my diet. A. Full. Blown. Disaster. Never again.
What I will miss the most are organic corn chips as part of a vegan taco platter. Sad.
So I tried to come up with an alternative this week, and the final result wasn’t too bad.
Taco Platter: Mary’s Gone Crackers Original Crackers, Organic Salsa, Daiya Cheese shreds, chopped tomato, chopped red pepper and chopped green onion. I put the layered goods in a glass pie plate and broiled the dish in the oven for a few minutes.
It was pretty good. The crackers don’t perfectly duplicate corn chips, but I can live with it. It was fantastic to have gooey (yes, non-raw and processed) cheese and salsa slathered all over chips crackers. On the evenings I need a quick, warm meal – I will be putting this together in a heartbeat. And probably making a similar platter for my husband.
You’ll notice that I had a few processed food ingredients sprinkled into the meals and that I’m eating more cooked food. I’m just tired. I would normally make my own cheese and salsa and crackers, but I’m just too tired. I’m not rigid with my diet which means I can be flexible when the need arises. My raw to cooked ratio is still about the same however – the gallons of green juice and smoothies that I’m drinking guarantee that.
